The leak was upstairs. Why is the work at floor level?
Because there is nothing in the wall to stop the water. Framing of this age runs the stud bays from the sill to the roof as one continuous void, so water entering high falls the whole way and collects at the bottom plate. The visible damage upstairs is usually the smaller half of the job.
How is a wall like that dried?
From the bottom, with equipment set at the plate and readings taken in the framing rather than in the room. Air moved across the surface of a wall does nothing for a cavity that is open its full height, so the drying has to be set up for the void rather than for the space you can see.
What does opening an old wall add to the rebuild?
Usually more than the drywall equivalent would. Original lath and plaster finishes over these cavities are specialist work to reinstate, and matching them is a different trade at a different rate. Ask whether the rebuild line is priced to match the original or to replace it with a modern equivalent.
