Does treated or salted water change the work?
It can. Brine is not clean supply water, so material that has been in contact with it is assessed differently and some of it is removed rather than dried and returned. Tell the contractor what the appliance was discharging, because it affects the category and therefore the scope.
Does the softener itself get replaced as part of the job?
Not by a restoration contractor. Treatment equipment that has failed is a plumbing item, assessed and replaced by that trade on its own estimate, and the two documents are usually settled separately.
